It is up to restaurant staff to do what they can to accommodate these requests, in order to ensure that customers enjoy their experience as much as possible, so that they will return in the future and tell friends and family about their experience.

    In some cases, people make special requests due to allergies and intolerances so it’s essential that the restaurant can cater for these requirements. In addition to this, restaurants must ensure that they adhere to health and safety guidelines to prevent anyone from suffering food poisoning in Sunderland.

    However, on a busy night it may not be easy to accommodate all requests, and may in fact make it difficult for you to serve all of the customers who come in on that day. Here are some ways in which you can accommodate a special request.

    • Make sure you are clear. If you are not entirely sure what the special request was exactly, make sure that you go and ask so that you are not confused. If something seems strange or difficult to do then you should always confirm that this is what is being asked first.
    • Prepare a couple of extras. Every time you get a special request for one of the dishes on the menu, you could make a couple of extra of this version of the meal, in case someone else asks for it later on. This will save you time in the future. You could freeze these so that they are always available.
    • Ascertain whether it is an allergy. Someone may ask for something to be removed from a dish and you should do this, but find out whether it is a case of not liking the item or being allergic. If the person is badly allergic then you should start from scratch and make another dish which has not touched the item that the customer is allergic to, or risk an allergic reaction.
