The dangers of having a deep fat fryer

Having a deep fat fryer means that you are frequently cooking foods in temperatures of up to 400 degrees C. In doing so, the food becomes a crisp delight on the outside, and is ideally cooked in the centre.

Of course, having a deep fat fryer is extremely hazardous. Cooking at such high temperatures with an extremely flammable liquid is a cocktail for fire-related risks at work. In addition, the equipment, as well as the oil, becomes extremely hot during service, and so risk of burns is also high.

If you are considering having a deep fat fryer in your kitchen, it is important that you have it installed away from any water supply. Water reacts instantaneously, and viciously, with hot oil above 350 degrees C. It vaporises into steam that can cause severe scalds, and causes the hot oil to spit, which can in turn cause debilitating burns.
