    How to test if meat is cooked through


    In an ideal world, you should always test if meat is cooked through by using a suitable kitchen thermometer or similar apparatus. However, life is rarely perfect and not everyone owns a kitchen thermometer. It is possible to test if meat is cooked properly by using one of the methods described below.

    The palm/finger test

    To test if your meat is cooked using the palm/finger test:

    • Open your hand and relax it (palm up)
    • Using the other hand, touch the fleshy part immediately below the lowest thumb joint (raw meat feels like this)
    • Touch your index finger’s tip to your thumb’s tip. You should then touch the muscle under your thumb again (rare meat feels like this)

    Repeat this process with the tip of your middle finger (medium-rare) and ring finger (well done) to your thumb.

    The fist test

    In a similar way, making a fist and feeling the webbing between the index finger and the thumb will indicate if meat is rare (relaxed fist; fingers curled in loosely, thumb resting on index finger), medium (fist tensed/clenched a little tighter) or well done (tight fist).

    The face test

    Touching different areas of your face (relaxed, no grimacing or smiling) also gives you an idea how meat feels at varyious stages of cooking:

    • Fleshy part of cheek: rare
    • Chin (above point, but well below lower lip): medium rare
    • Tip of nose: medium
    • Forehead: well done

    With a little practice, any one of these methods will allow you to quite accurately test if meat is cooked and prevent food poisoning infections.

    Meat in restaurants

    To make sure customers are not made ill by food poisoning bacteria, restaurant kitchens must ensure meat is stored, prepared and cooked properly at all times. If this is not done and you are made ill by contaminated or improperly cooked meat, you may be entitled to claim for compensation.

    When to claim

    You will be able to make a personal injury claim if it can be shown that your food poisoning infection was caused by lack of proper storage, preparation or cooking of meat and you were infected by contaminated meat within the last three years.
